Happy Pancake Day! I absolutely love pancakes, in fact I think I am yet to come across anybody who doesn’t. But with a strict cheer diet in full flow, I’m trying my absolute best to eat healthy at the moment, but of course, I do not want to miss out on pancakes.
So here is, my recipe for guilt free pancakes… enjoy!
For the pancakes
- 1 Banana
- 1 whole egg
- 2 egg whites
For the sauce
- 1 cup of mixed berries
- 1 tablespoon of honey
- 2 tablespoons of water
Wiz all of the pancake ingredients together, I use my Nutribullet to do this, but you could always do it the old fashion way and whisk it up. (Just be sure you mash up the banana well first).
Melt a teaspoon of coconut oil in a frying pan
Tip in your pancake mix, to make a good sized pancake.
Don’t have your frying pan on too hot, as the banana in these pancakes can make them burn quite quickly, let it cook on one side and then flip it over and cook on the other side.
For the sauce, put all of the berries into a saucepan, add honey and cover with 2 tablespoons of water. Stir regularly and cook until all of the fruit is broken down, (Usually about 10 minutes).
Serve with natural yogurt and top with a sprinkle of cinnamon – enjoy!
