Sugar Free Date & Banana Flapjack

Lately, I've been trying to make smarter decisions when it comes to what I'm eating, and getting a sweet tooth craving is always where I fall down. Chocolate, Cake, Cookies, they're all calling my name. Not only isn't it great for your waistline, sugar is also one of the main causes of aging skin - my worst nightmare.

So when Holland & Barrett asked me to collaborate and come up with a 'Sugar Free Bake', I was very happy to involved. I love baking, and I'm trying to cut down on my sugar intake, so this was great fun for me!

I decided to make some banana & date flapjacks. They are the perfect snacks for kicking a sweet craving. Even if I do say so myself. They are also great if you've got friends coming over but you're trying to stick to your health kick, so you don't have to sit there and drool while your friends indulge in everything you're trying to avoid. So; without further ado, here is the recipe!

80ml vegetable oil
180g oats
175g medjool dates (chopped)
2 bananas sliced
50g sunflower seeds
50g sultanas 
1 teaspoon vanilla essence
1 teaspoon cinnamon (optional)

Pre-heat your oven to 175C.

Mash the bananas in a large bowl.

Add the dates and oil to the bananas and mix together.

Stir in the oats, vanilla essence, sunflower seeds and sultanas. Leave to stand for 5 minutes, so the oats absorb the oil.

Line a baking tray with grease-proof paper, and spoon in the mixture. 

Bake at 175C for about 25-30 minutes.

Leave it to cool for 10 minutes on a wire rack before cutting into sqaures.
